This is a light-roast Ethiopian coffee from the Chito district in the celebrated Yirgacheffe region, grown at high elevations around 1,900 meters and produced from heirloom varietals by smallholder farmers. The high altitude, fertile volcanic soils, and cool climate allow cherries to mature slowly, resulting in a bright, clean cup with exceptional clarity. Expect floral aromatics, lively acidity, and layered apricot, cocoa, and floral notes —hallmarks of classic Yirgacheffe coffees. The coffee is washed and dried on raised beds, a process that enhances elegance, balance, and transparency in the cup.

This coffee is connected to the work of Biru Bekele, a highly regarded producer whose influence has helped elevate quality standards in southern Ethiopia. The Biru Bekele Wash Station, established in 2019, serves as a key processing hub for surrounding farms. Founded by Biru Bekele after more than 18 years of experience as a coffee grower, the station was created to unlock the region’s full potential through improved processing and careful quality control. Cherries delivered to the station are meticulously sorted and processed, reflecting a deep commitment to craftsmanship. Biru Bekele is particularly known for innovation in fermentation, including the use of Cimma yeast in select natural-process coffees, which enhances complexity and distinct flavor expression. While this offering is a washed coffee, it reflects the same attention to detail and quality-driven philosophy that defines Biru Bekele’s work.
